This Strawberry Lemon Cheesecake Tart is a simple but amazingly delicious dessert that will definitely hit the spot this strawberry season.

This tart is sooo easy to make and you can pretty much make the components separately and then just assemble it before you serve it if you like. It’s perfect for when you have people around or even if it’s just the 2 of you on a relaxing weekend together. So if you’re entertaining or having a BBQ all you need to do is have the puff pastry cooked, whizz up the lemon cheesecake filling, cut up the strawberries and that’s it! Another bonus is, when it’s just the 2 of you, you get more!
So I used bought puff pastry for this. I’m not into creating more work (read: pain) for myself than necessary, so I bought it. Don’t get me wrong, I love making shortcrust pastry, but puff pastry… haven’t tackled that one yet!

The filling is basically lemon curd – I used homemade lemon curd, but you can use bought lemon curd if you like – beat it into some cream cheese along with some icing/powdered sugar and there’s your lemon cheesecake filling! I actually made mine in the food processor, which made it even silkier. It really is delicious.
And how amazing are fresh strawberries? When I was making this the smell of them in the kitchen was amazing! The good thing was that when I was making this I was getting my quota of fresh fruit too, because for just about every one I sliced I popped another one in my mouth…

A simple but incredibly delicious dessert for Spring and Summer entertaining.

  • 2 sheets pre-rolled of puff pastry
  • 250g / 4 oz of cream cheese at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy/thick cream
  • 1/3 cup icing/powdered sugar
  • 1/3 cup lemon curd
  • 500 / 18 oz strawberries
  1. Preheat oven to 220C / 390F.
  2. Line a baking sheet with baking paper and dust with flour. If not using pre-rolled puff pastry, roll into a sheet approximately 20x25cm / 8x10in.
  3. Place the puff pastry on the baking sheet. Overlap the 2 pre-rolled sheets and press the join with a fork to seal the join. Brush the edges with water and fold over to create a 2.5cm/inch border all the way around. Poke the pastry all over the centre with a fork to stop it from rising. Brush the whole tart with an egg wash made of 1 egg and a little milk mixed together. Bake for 10-15 minutes or until just golden. Take the pastry out of the oven and press gently with a clean cloth if it has risen in the centre. Leave to cool.
  4. Place the cream cheese, lemon curd, vanilla, cream and icing/powdered sugar in an electric mixer or food processor and mix until nice and smooth.
  5. Spoon the cheesecake mixture onto the puff pastry and smooth out, leaving the edges out.
  6. Top with cut strawberries and dust with icing sugar.
  7. Serve chilled or at room temperature.
